Spicy sabayon with strawberries and chocolate topcook.tomathouse.com
Ingredients:
Sabayon
- 4 egg yolks
- 3/4 cup sweet Marsala
- 1/4 cup sugar
- 1/4 tsp cayenne pepper
Chocolate sauce
- 1 tbsp. semi-sweet chocolate granules
- 1/3 cup fatty blueberries
- 16 medium strawberries, hulled and thinly sliced
- 0.5 cup whole salted pistachios, shelled
Preparation:
- Sabayon:
In a medium bowl, combine the egg yolks, wine, sugar, and cayenne pepper. Place the bowl over a saucepan of simmering water and whisk vigorously until thick and foamy, 6-8 minutes. Set aside.
- Chocolate sauce:
Reduce the heat under the water to a gentle simmer. Place the chocolate and cream in a small bowl. Place the bowl over the simmering water and stir until the chocolate has melted and the mixture is smooth, about 5 minutes.
- Spoon the chocolate sauce into 4 small ramekins. Top with sliced strawberries. Spoon the sabayon over the strawberries and sprinkle with pistachios, if using.
