Thai Pork Noodles

Ingredients:

    Pork

  • 4 natural boneless pork loin cutlets, 2-2.5 cm thick.
  • 1/4 cup soy sauce
  • 1/4 cup chopped cilantro
  • 3 cloves garlic, minced (about 3 tablespoons)
  • 3 tbsp. l. brown sugar
  • 1 tbsp. vegetable oil
  • Juice of 1 lime

    Peanut noodles

  • 280 g spaghetti, linguine, or capellini
  • Juice of 1 lime
  • 2 cloves garlic, crushed
  • 0.5 cup creamy peanut butter
  • 1 cup of hot water
  • 2 tablespoons soy sauce

Preparation:

  1. Combine soy sauce, cilantro, garlic, brown sugar, vegetable oil, and lime juice in a bowl. Arrange the pork cutlets in an even layer in a large baking dish. Pour the marinade over the pork, reserving about 1/4 cup of the marinade in the refrigerator for later use. Marinate the pork for 20-30 minutes.
  2. Meanwhile, cook the pasta according to package directions. Whisk together the lime juice, garlic, peanut butter, hot water, and soy sauce. Drain the pasta and toss it in a large bowl with the peanut sauce. Add more soy sauce if desired.
  3. Preheat an outdoor grill or grill pan over medium-high heat. Remove the pork chops from the marinade, discarding any excess. Place the chops on the hot grill and cook for 4 minutes per side, turning once, until the internal temperature reaches 145°F (63°C) for medium rare or 165°F (71°C) for medium on a meat thermometer.
  4. Transfer the pork chops to a cutting board and let rest for 3 minutes, then cut into strips across the grain.
  5. Before serving, pour the remaining marinade over the sliced ​​pork and serve with peanut noodles.
