Steak in the oven

Ingredients:

  • 2 New York steaks, 4 cm thick.
  • 6 tablespoons unsalted butter at room temperature

  • Pizza oven

Preparation:

  1. Preheat the pizza oven for 15 minutes.
  2. Meanwhile, rub each steak with 1 tablespoon of butter, then season generously with salt and pepper.
  3. Place a medium cast-iron skillet in the pizza oven and heat for 5 minutes. Place the steaks in the skillet, return the skillet to the oven, and bake until crispy on the bottom, 2-5 minutes. Flip the steaks and bake until the other side is dark brown, another 2-5 minutes.
  4. Transfer the steaks to a cutting board with tongs; do not wash the pan. Holding the steaks with tongs, slice them across the grain into 1-cm-thick slices. Return the steaks to the pan, pressing the slices together so they are all touching. Brush each steak with 2 tablespoons of butter and return to the oven.
  5. Cook to your desired doneness, basting with melted butter halfway through. For medium-rare, cook for about 2 minutes longer, depending on your oven temperature.
