Super delicious oatmeal cookies with chocolate chips topcook.tomathouse.com
Ingredients:
- 2 cups premium flour
- 1 cup oatmeal
- 1 teaspoon baking powder
- 1/2 tsp ground cinnamon
- 1/2 tsp coarse salt
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 230 g unsalted butter at room temperature
- 2 eggs
- 1 tsp vanilla extract
- 340g dark chocolate, broken into pieces
- 1 cup chopped walnuts
- Flaked sea salt, for garnish
Preparation:
- Preheat oven to 180C.
- In a small bowl, combine flour, oats, baking powder, cinnamon and salt.
- In a large bowl or the bowl of a stand mixer, combine the brown sugar, granulated sugar, and butter. Using a stand mixer or a stand mixer fitted with a pastry attachment, beat the butter and sugar until the mixture is pale and fluffy. Add the eggs one at a time and beat until combined. Stir in the vanilla extract.
- Using a silicone spatula or a mixer on low speed, gradually fold the flour mixture into the butter and sugar mixture. Mix until smooth. Add the chocolate chips and walnuts.
- Place 2 tablespoons of dough on an ungreased baking sheet, leaving 5 cm between each ball. Place the baking sheet in the oven and bake for 12-13 minutes.
- When you take the cookies out of the oven, IMMEDIATELY sprinkle them with a few grains of sea salt. It's crucial to do this while the cookies are still hot.
- Cool the cookies for 2-3 minutes and transfer them to a wire rack to cool further.
