Ingredients:
- 2 greenhouse cucumbers, thinly sliced
- 2 fresh hot red chili peppers, thinly sliced
- 2 large handfuls of fresh mint leaves
- 2 tbsp. rice vinegar
- 4 teaspoons of sugar
- Salt and freshly ground black pepper
Preparation:
- Combine cucumbers, chili, and mint in a bowl. Pour in vinegar, sprinkle with sugar, salt, and pepper. Stir until the cucumbers are well coated.
- Refrigerate overnight; the cucumbers will soften as they marinate and the flavor will intensify.
