Salmon in honey-mustard sauce in the oven

Ingredients:

  • 4 salmon fillets weighing 170–200 g, with skin
  • 0.5 tbsp. low-fat mayonnaise
  • 1/4 cup Dijon mustard
  • 1/4 cup honey
  • 2 tbsp finely chopped chives + extra for serving

Preparation:

  1. Preheat oven to 175°C. Line a large baking sheet with a non-stick silicone mat and place the salmon on top, skin side down. Set aside.
  2. In a medium bowl, combine the mayonnaise, mustard, honey, and green onions and mix thoroughly. Set aside half the sauce. Spoon the remaining sauce over the fish, spreading it evenly over the top and sides of each fillet. Season with salt and pepper.
  3. Bake until the fish is set in the center, 7 minutes. Turn the oven to broil. Grill the fish for 6–7 minutes, being careful not to overcook it. Sprinkle with green onions and serve with the remaining sauce.
