Ingredients:
Ribs
- 4 slices of pork ribs from the brisket area
- 2 cups soy sauce
- 2 cups brown sugar
- 0.5 cup peeled garlic cloves
- 0.5 cup chopped fresh ginger
- 1 tbsp. ground black pepper
Sauce
- 2 cups guava puree
- 1.5 cups soy sauce
- 0.5 cups honey
- 0.5 cup yuzu and lime juice
- 1 cup cornstarch
Preparation:
- Rack of pork ribs:
Preheat the oven to 230°C. Place the ribs in a roasting pan, add soy sauce, brown sugar, garlic, ginger, pepper, and 1 liter of water. Cover with foil and roast for 4 hours. Remove the foil and drain any excess liquid, then let cool and refrigerate.
- Sticky honey glaze with lime juice:
Combine the guava, soy sauce, honey, yuzu lime juice, salt, and black pepper in a saucepan and bring to a boil over high heat. Mix the cornstarch in a small bowl with enough water to form a paste, then add it to the sauce and bring to a gentle simmer. Cook for 2 minutes, then remove from heat.
- Preheat grill to medium-high heat.
- Cut the ribs into 2-bone portions. Grill for 1-2 minutes per side. Transfer to the pan with the simmering sauce. Simmer until warmed through, about 5 minutes.
