Chicken Parmesan Pizza

Ingredients:

  • 1 ball of store-bought pizza dough
  • Corn grits or flour
  • 2 tbsp extra-virgin olive oil (plus extra for drizzling)
  • 450 g of minced chicken
  • 3 cloves garlic, finely chopped
  • 1 small onion, finely chopped
  • A handful of finely chopped parsley
  • A couple of pinches of crushed red pepper flakes
  • A couple of pinches of dried oregano
  • 1 can (220 g) of tomato sauce
  • 1 tbsp. grated parmesan
  • 1.5 cups grated provolone
  • 5–6 basil leaves, torn

Preparation:

  1. Preheat oven to 220°C.
  2. Lightly dust your hands and work surface with cornmeal. Using your hands or a rolling pin, form a round pizza dough about 35 cm in diameter. Place the dough on a baking sheet or pizza stone and make a few indentations in the surface with your fingers. Drizzle the dough with a little olive oil and bake for 10 minutes.
  3. Meanwhile, heat a deep skillet over medium-high heat with 2 tablespoons of olive oil. Add the ground beef and mash it with a wooden spoon. Add the garlic and onion to the browned ground beef, then season with salt and pepper. Sauté for 5–6 minutes, then add the parsley, red pepper flakes, oregano, and tomatoes. Heat the sauce through.
  4. After 10 minutes, remove the pizza from the oven, top with sauce, and sprinkle with cheese. Return to the oven and bake until golden brown, another 10–12 minutes. Sprinkle the pizza with basil, slice, and serve.
