Catfish nuggets

Ingredients:

  • 2 tbsp. + 2 tbsp. l. milk
  • 3 catfish fillets, cut into 2.5 cm pieces.
  • 2 cups flour, divided
  • 3 eggs
  • 1 cup corn flour
  • 2 tablespoons of sugar
  • Vegetable oil, for frying
  • 0.5 cup hot sauce
  • 2 tablespoons powdered sugar

Preparation:

  1. In a bowl, combine 2 cups of milk and a large pinch of salt. Whisk until the salt is completely dissolved and add the fish pieces. Let sit at room temperature for 30 minutes.
  2. Prepare the breading area:

    Place 1 cup of flour in one bowl. In another bowl, beat the eggs with 2 tablespoons of milk. In a third bowl, combine the remaining 1 cup of flour, cornmeal, sugar, and a pinch of salt, then add a few turns of black pepper.
  3. Pour 2.5 cm of vegetable oil into a straight-sided frying pan. Heat until the oil begins to sizzle when touched with the handle of a wooden spoon. The oil temperature will be approximately 175°C.
  4. Remove the fish from the milk, 6-8 pieces at a time. Shake off excess milk. Dredge in flour, then dip in egg, and then in a mixture of wheat and corn flour.
  5. Place the pieces in the pan, being careful not to overcrowd, and reduce the heat. Fry, turning once, until lightly golden brown and cooked through, about 6 minutes. Transfer the fish to a paper towel-lined plate and sprinkle with salt. Fry the remaining catfish pieces in the same manner.
  6. Pour hot sauce into a small bowl and sprinkle with powdered sugar. Stir gently. Drizzle the sauce over the nuggets or eat them dipping.
