Ingredients:
- 2 tbsp. + 2 tbsp. l. milk
- 3 catfish fillets, cut into 2.5 cm pieces.
- 2 cups flour, divided
- 3 eggs
- 1 cup corn flour
- 2 tablespoons of sugar
- Vegetable oil, for frying
- 0.5 cup hot sauce
- 2 tablespoons powdered sugar
Preparation:
- In a bowl, combine 2 cups of milk and a large pinch of salt. Whisk until the salt is completely dissolved and add the fish pieces. Let sit at room temperature for 30 minutes.
- Prepare the breading area:
Place 1 cup of flour in one bowl. In another bowl, beat the eggs with 2 tablespoons of milk. In a third bowl, combine the remaining 1 cup of flour, cornmeal, sugar, and a pinch of salt, then add a few turns of black pepper.
- Pour 2.5 cm of vegetable oil into a straight-sided frying pan. Heat until the oil begins to sizzle when touched with the handle of a wooden spoon. The oil temperature will be approximately 175°C.
- Remove the fish from the milk, 6-8 pieces at a time. Shake off excess milk. Dredge in flour, then dip in egg, and then in a mixture of wheat and corn flour.
- Place the pieces in the pan, being careful not to overcrowd, and reduce the heat. Fry, turning once, until lightly golden brown and cooked through, about 6 minutes. Transfer the fish to a paper towel-lined plate and sprinkle with salt. Fry the remaining catfish pieces in the same manner.
- Pour hot sauce into a small bowl and sprinkle with powdered sugar. Stir gently. Drizzle the sauce over the nuggets or eat them dipping.
