Ingredients:
Butter
- 110 g (8 tbsp) salted butter, melted
- Zest of 1 lemon + 1/4 tbsp. lemon juice
- 2 tbsp capers
- 2 cloves garlic, grated
- A pinch of coarse salt
Baking tray
- 4-8 green onions
- 4 flounder fillets
- 8 thin slices of lemon
- Hot Hungarian paprika, for sprinkling
Preparation:
- Line a baking sheet with non-stick foil and place in the oven. Preheat the oven to 200°C.
- Butter:
Meanwhile, combine butter, lemon zest and juice, capers, garlic and salt in a medium bowl.
- Baking tray:
Cut the green onions in half lengthwise. You can leave the thin greens whole. Make sure all the ingredients are ready so you can quickly assemble the baking sheet and return it to the oven. Remove the baking sheet from the oven once the oven is preheated.
- Quickly arrange the fish in a row, spacing them a few centimeters apart. Drizzle with the oil mixture, arrange lemon slices on top of the fish, then green onions. Sprinkle with paprika.
- Return the pan to the oven and bake until cooked through, 12-18 minutes. Serve warm, ideally with garlicky mashed potatoes!
