Ingredients:
- 2 cups fresh parsley
- 4 cloves garlic, crushed
- 1 sprig (15 cm) fresh rosemary, leaves removed, stem discarded
- 1 green onion, cut into 3 pieces
- 2/3 cup extra-virgin olive oil
- 2 tablespoons apple cider vinegar
- Zest of 1 lemon + 2 tsp freshly squeezed lemon juice
- 0.5 tsp red chili flakes
Preparation:
- Place the parsley, garlic, rosemary, and green onions on a cutting board. Chop with a knife, stirring the mixture several times until smooth. Transfer the chopped herbs to a medium bowl.
- Add olive oil, vinegar, lemon zest and juice, and chili flakes. Season with salt and pepper. Serve with steak or beef meatballs.
