Ingredients:
- 450 g large peeled shrimp
- 1/3 cup extra-virgin olive oil, plus more for the shrimp
- Coarse salt and freshly ground pepper
- 8 cups (about 225 g) young arugula shoots
- 1 cup sliced cucumber
- 1/2 cup pitted Kalamata olives
- 1/4 cup thinly sliced red onion
- 2 tablespoons fresh lemon juice
- 230g feta cheese (crumbly), for serving
Preparation:
- Preheat the grill to medium-high heat. Brush the shrimp with a little oil, then season with salt and pepper. Grill until cooked through, 2-3 minutes per side.
- In a bowl, combine shrimp, arugula, cucumbers, olives and onion.
- Combine lemon juice, 1/3 cup olive oil, salt, and pepper. Pour the dressing over the salad and toss well. Sprinkle with feta cheese.
