Ingredients:
Spice mix
- 1.5 tsp paprika
- 1 tsp onion powder
- 1 teaspoon garlic powder
- 1/4 teaspoon salt
- 0.5 tsp oregano
- 1/4 teaspoon thyme
- 1/4 tsp finely ground black pepper
- 1/8 tsp cayenne pepper
- 1.5 tsp. brown sugar
- 450 g salmon fillet
- 2 tsp corn oil
Grapefruit salsa
- 2 cups canned grapefruit wedges or 3 fresh grapefruits, peeled and cut into wedges
- 1/3 cup chopped green onions
- 1/4 cup chopped red bell pepper
- 1/4 cup chopped fresh cilantro
- 1 jalapeño pepper, diced
Preparation:
- Preheat oven to 190°C.
- Combine paprika, onion powder, garlic powder, salt, oregano, thyme, black pepper, cayenne pepper, and brown sugar in a small bowl. Cut the salmon into quarters and brush with oil.
- Spread the spice mixture over the fish pieces, generously rubbing them over the entire surface. Place the salmon on a shallow, rimmed baking sheet.
- Bake for 15-20 minutes, until the fish is firm. Cut the grapefruit into bite-sized pieces.
- Combine all the salsa ingredients and serve with the salmon. The grapefruit salsa can be made ahead of time and refrigerated until ready to serve.
