Ingredients:
- Vegetable oil for deep-frying
- 1.5 cups premium flour
- 1 tbsp. granulated sugar
- 3/4 tsp baking powder
- 3/4 tsp cinnamon
- 1/8 tsp fine salt
- 3/4 cup milk
- 1 large egg
- 1 tbsp maple syrup + 1/4 cup for greasing
- 0.5 cup powdered sugar, for serving
- Equipment: Pastry bag with nozzle No. 3.4
- Additionally: Gummy spiders, orange or black sprinkles
Preparation:
- Pour about 2.5 cm of oil into a large skillet. Heat the oil over medium-high heat to 275°F–300°F.
- Meanwhile, in a large bowl, combine the flour, granulated sugar, baking powder, cinnamon, and salt. Make a well in the center and add the milk, egg, and 1 tablespoon of maple syrup. Knead until smooth.
- Transfer the batter to a large pastry bag fitted with a #3 or #4 open tip. Working in batches and making a few cookies at a time, gently pipe the batter into the butter using a circular motion, then back and forth, to create a free-form web-like pattern about 8–10 cm in diameter. Fry until golden brown on the bottom, about 2 minutes.
- Using tongs or a slotted spoon, flip the khvorost and fry until golden brown on the other side, about 1 more minute. Transfer to paper towels to remove excess oil. Repeat with the remaining batter.
- Lightly brush the brushwood with maple syrup and dust with powdered sugar. Serve warm or at room temperature, garnished with gummy spiders or sprinkles, if desired.
