Quick Braised Red Cabbage with Apples and Bacon in a Skillet topcook.tomathouse.com
Ingredients:
- 220 g thick slices of bacon or sliced pork belly
- 1 head red cabbage (1 kg), shredded (about 12 cups)
- 1/4 cup unsweetened apple juice
- 1 tbsp. honey
- 1 tbsp. apple cider vinegar
- 1 Gala apple, thinly sliced
- Coarse salt and freshly ground black pepper
- 4 green onions, thinly sliced
Preparation:
- Place the bacon in a large nonstick frying pan. Place over medium-high heat and cook until crisp, about 6 minutes per side. Transfer to a paper towel-lined plate, discarding the fat in the pan. Once the bacon has cooled, crumble it into small pieces.
- Reduce heat to medium and add the cabbage to the pan. Cook, stirring frequently, until slightly wilted, about 4 minutes. Pour the apple juice, honey, and vinegar down the side of the pan. Cook, stirring occasionally, until the liquid has evaporated, another 2–3 minutes. Add the apples and sprinkle with 1 teaspoon of salt and 3/4 teaspoon of black pepper. Stir. Turn off the heat and add the green onions and crumbled bacon.
- Transfer to a serving platter and serve warm.
