topcook.tomathouse.com

Ingredients:

  • 220 g thick slices of bacon or sliced pork belly
  • 1 head red cabbage (1 kg), shredded (about 12 cups)
  • 1/4 cup unsweetened apple juice
  • 1 tbsp. honey
  • 1 tbsp. apple cider vinegar
  • 1 Gala apple, thinly sliced
  • Coarse salt and freshly ground black pepper
  • 4 green onions, thinly sliced

Preparation:

  1. Place the bacon in a large nonstick frying pan. Place over medium-high heat and cook until crisp, about 6 minutes per side. Transfer to a paper towel-lined plate, discarding the fat in the pan. Once the bacon has cooled, crumble it into small pieces.
  2. Reduce heat to medium and add the cabbage to the pan. Cook, stirring frequently, until slightly wilted, about 4 minutes. Pour the apple juice, honey, and vinegar down the side of the pan. Cook, stirring occasionally, until the liquid has evaporated, another 2–3 minutes. Add the apples and sprinkle with 1 teaspoon of salt and 3/4 teaspoon of black pepper. Stir. Turn off the heat and add the green onions and crumbled bacon.
  3. Transfer to a serving platter and serve warm.
