Beef Stroganoff with Sour Cream topcook.tomathouse.com
Ingredients:
- 900 g pre-trimmed beef tenderloin
- Table salt and freshly ground pepper
- 3 tablespoons garlic in olive oil
- 1 chopped onion
- 2 cups of rich meat broth
- 1.5 cups sour cream
Preparation:
- Cut the beef across the grain into long, narrow strips 5 cm long and 1.5 cm thick. Pat dry and season with salt and pepper to taste. Heat 2 tablespoons of olive oil in a large saucepan over medium heat. Add the prepared meat and brown for about 3-5 minutes. Remove the beef from the pan and set aside.
- Add another 1 tablespoon of oil to the pan and, if desired, add the onion. Cook until lightly golden, stirring, then add 1/4 cup of beef broth to deglaze. Add the remaining beef broth and the beef with its juices and simmer for 10 minutes. Stir in the sour cream and heat through, but do not bring to a boil. Season with seasoning if desired. Transfer the stroganoff to a serving platter and serve.
