Orange-cranberry fizzy cocktail topcook.tomathouse.com
Ingredients:
- 0.5 cup blood orange juice + 2 blood orange wedges, for serving
- 1/3 cup sugar
- 4 large sprigs of fresh thyme
- 1 and 1/4 cups ginger beer
- 0.5 cup cranberry juice
- Frozen cranberries, for serving
Preparation:
- Add the blood orange juice, sugar, and thyme to a small saucepan and place over medium heat. Bring to a boil, stirring to dissolve the sugar, and simmer for 2 minutes to blend the flavors. Turn off the heat and let the mixture steep and cool to room temperature, about 1 hour.
- Remove the thyme and strain the syrup through a sieve. At this point, the syrup can be covered and refrigerated until ready to use, up to 1 week.
- Add 2 tablespoons of orange syrup to 2 tall glasses filled with ice. Pour half the ginger beer into each glass, then half the cranberry juice. Stir and serve with frozen cranberries and a blood orange wedge.
