Ingredients:
- 2 cups of coarsely chopped turkey meat
- 4 cups chicken or turkey broth
- 1 ready-made shortcrust pastry crust for pie
- 1 chopped onion
- 2 chopped celery stalks
- 3 chopped carrots
- 1/2 cup frozen green peas (defrosted)
- 2 peeled and diced potatoes
- 2 tablespoons chopped parsley
- 2 tbsp (30 g) butter
- 4 tbsp flour
- 1 lightly beaten egg
Preparation:
- Preheat oven to 180°C.
Melt the butter in a saucepan and sauté the chopped onion until soft. Add the celery and carrots and cook for another 2 minutes. Stir in the flour and cook for another 2 minutes. Add the chicken broth and bring to a boil. Add the potatoes and simmer until soft.
Add the turkey, parsley, and peas. Pour the mixture into a casserole dish. Top with a shortcrust pastry crust and brush with egg wash. Bake the pot pie for 30 minutes, until golden brown.
