Thai beef in spicy mint sauce topcook.tomathouse.com
Ingredients:
- 450 g very thinly sliced beef flank steak
- 3 tablespoons vegetable or canola oil
- 4 crushed cloves of garlic
- 2 - 3 Thai chili peppers (such as prik keenu) or serrano chili peppers, stemmed and thinly sliced
- 3 shallots, thinly sliced
- 1 red bell pepper, sliced 0.3 cm thick
- 1/4 cup fish sauce
- 2 tbsp sweet soy sauce
- 2 tablespoons black soy sauce
- 1 tbsp chili paste in soybean oil
- 1.5 cups chopped fresh Thai basil leaves (or regular basil)
- 1 cup whole fresh mint leaves
- White rice for serving
Preparation:
- Heat oil in a large skillet over medium-high heat. Add the garlic and chili pepper and cook until fragrant, about 30 seconds. Add the meat and cook, stirring frequently, for 2 minutes. Add the shallots and bell pepper and cook for 1 minute.
- Add fish sauce, sweet soy sauce, black soy sauce, and chili paste. Bring the mixture to a gentle simmer and cook, stirring frequently, until the meat is cooked through and the vegetables are tender, about 3 minutes.
Remove the pan from the heat and stir in the basil and mint until softened. Serve with rice.
If you can't find sweet and dark soy sauce, take 1/4 cup of regular soy sauce and mix it with 1/4 cup of honey or sugar.
