Coffee granita

Ingredients:

  • 3 cups strong, hot brewed coffee, regular or decaffeinated
  • 3/4 cup sugar
  • 2 tsp coffee liqueur, such as Tia Maria
  • 1 teaspoon vanilla extract or vanillin to taste

Preparation:

  1. Combine coffee, sugar, coffee liqueur, and vanilla and stir until the sugar dissolves. Pour the mixture into a 23x33 cm pan.

    Place in the freezer for an hour, until the edges of the mixture begin to harden. Stir the mixture with a fork every 30 minutes to prevent it from hardening into a uniform mass; the mixture should resemble snow.

    Wrap the pan in foil and refrigerate for up to 2 hours before serving.
  2. Spoon the granita into bowls or martini glasses and garnish with a dollop of whipped cream. Serve immediately.
