Baked carrots with avocado and orange topcook.tomathouse.com
Ingredients:
- 700 g young carrots, tops trimmed
- 1 orange, divided into segments
- 1/2 avocado, cut into cubes
- 1/2 tsp coriander seeds
- 3 tbsp. l. olive oil
Preparation:
- Toss the carrots with olive oil and coriander seeds. Place on a baking sheet and season with salt and pepper.
Bake at 210°C, stirring once, for 25-30 minutes. Top with avocado slices, orange slices, and a little juice.
Season with salt and pepper.
