Ingredients:
- 2 cups of beer
- 2 packets unflavored granulated gelatin (about 4.5 tsp)
- 1/4 cup granulated sugar
- 1/3 cup heavy cream
- 2 teaspoons powdered sugar
- 2 tbsp tequila
- 1 teaspoon grated lime zest, plus 16 small lime wedges, for garnish
- Special equipment: 16 shot glasses
Preparation:
- Pour 1/2 cup of beer into a medium bowl. Add the gelatin and let it dissolve, about 1 minute.
In a small saucepan, combine granulated sugar and the remaining 1.5 cups of beer. Heat over low heat until the sugar dissolves, but do not bring to a boil. Pour in the dissolved gelatin and stir. Strain the mixture into a measuring cup and pour into 16-cup shot glasses. Refrigerate until ready to serve, about 2 hours.
- When ready to serve, beat the heavy cream and powdered sugar in a medium bowl with an electric mixer. Add the tequila and lime zest and stir. Place a dollop of whipped cream on top of the Jello shots to create a foamy effect. Garnish with lime wedges.
