Champagne cocktail with mango and spices

Ingredients:

  • 350 gr. mango nectar
  • 2 star anise
  • 1 cinnamon stick
  • 2 whole cloves
  • 12 black peppercorns
  • 1/2 tsp red pepper flakes
  • 1 bottle of champagne or sparkling wine

Preparation:

  1. In a small saucepan, bring the mango nectar to a boil. Reduce the heat to medium and cook for 2 minutes. Turn off the heat and add all the spices. Let the mixture cool, then strain and refrigerate.
  2. Spoon 2 tablespoons of the spiced mango mixture into flute glasses and top with chilled champagne.
