Ingredients:
- 450 g cooked sausage, cut into 4 pieces
- 2 tablespoons whole grain mustard
- 2 tablespoons of apple cider vinegar
- 4 tablespoons cup olive oil
- 1 large onion, cut into 6 wedges
- 450 g frozen potato dumplings (do not defrost)
- Salt and freshly ground pepper
- 1/4 cup coarsely chopped fresh parsley
Preparation:
- Preheat the grill to medium. Grill the sausage for 8-10 minutes on each side. Transfer to a baking sheet or platter.
- In a large bowl, combine mustard and vinegar, stirring constantly, pour in 2 tablespoons of olive oil, and mix until smooth.
- Toss the onions and pierogi with the remaining 2 tablespoons of olive oil, season with salt and pepper, and place on the grill. Cover the grill with a lid and cook the pierogi and onions for about 5 minutes. Flip the pierogi and onions over and continue cooking, covered, until done, about 4-6 minutes. Transfer to a baking sheet or plate.
- Cut the sausage into vareniki-sized pieces and add them to a bowl with the mustard dressing. Add the vareniki, chopped parsley, and coarsely chopped onion to the bowl with the dressing. Season with salt and pepper and stir. Divide the sausage and vareniki among servings.
