Ingredients:
Meatloaf
- 600 g of ground turkey
- 1 small onion, grated
- 1/3 cup breadcrumbs
- 1 celery stalk, finely chopped
- 1 large egg, lightly beaten
- 0.5 cups ketchup
- 1 tbsp finely chopped parsley
- 2 teaspoons soy sauce
- 1 teaspoon Worcestershire sauce
Garnish
- 700 g potatoes, peeled and cut into 4 pieces
- 3 tbsp (40 g) butter at room temperature
- 0.5 cup 2% milk, hot
- 1.5 cups frozen peas
Preparation:
- Cooking meatloaf. Preheat oven to 375°F (190°C). Grease a 22x12 cm (9x5 in) loaf pan. In a bowl, place the ground meat, onion, breadcrumbs, celery, egg, 2 tablespoons of ketchup, parsley, 1/2 teaspoon of salt, and pepper to taste. Mix all the ingredients together with your hands and transfer the mixture to the prepared pan. In a small bowl, combine the remaining ketchup with the soy and Worcestershire sauces. Brush the top of the meatloaf with two tablespoons of the mixture. Bake for about 30 minutes, until golden brown. Then remove the meatloaf and brush the top with the remaining ketchup sauce again. Continue baking for another 15-20 minutes, until golden brown. A thermometer inserted into the middle of the loaf should read 165°F (74°C). Remove the finished meatloaf from the oven and let it rest for 5 minutes before slicing.
- In the meantime, prepare the mashed potatoes. Place the potatoes in a large saucepan and cover them completely with cold water. Season with salt. Bring to a boil and simmer over medium heat until tender, about 30 minutes. Drain and mash the potatoes with butter. Add milk, salt, and pepper, and continue mashing until smooth. Place the peas in a microwave-safe bowl, sprinkle with water, and add salt and pepper to taste. Cover and microwave for about 4 minutes.
Serve the meatloaf with mashed potatoes and peas.
