Tomato, watermelon, and strawberry salad topcook.tomathouse.com
Ingredients:
- 1 cup cold watermelon, diced
- 2 tablespoons balsamic vinegar
- 1 tbsp. freshly squeezed lemon juice
- 0.5 cups olive oil
- 2 cups cherry tomatoes
- 2 Bull's Heart tomatoes or other large tomatoes
- 1 - 2 tsp. granulated sugar
- 1 tbsp fresh chopped tarragon
- 4 strawberries, hulled and finely chopped
Preparation:
- In a bowl, combine balsamic vinegar, lemon juice, and olive oil. Season with salt and pepper to taste.
- Halve the cherry tomatoes and slice the larger ones. Arrange them in a single layer, season with salt and pepper to taste, and sprinkle with sugar. Transfer to a bowl and drizzle with half the dressing. Add the tarragon and strawberries and toss to combine.
- Divide the tomato mixture among plates. Drizzle with more dressing and top with the watermelon. Serve immediately.
