Oatmeal cookies with brown butter topcook.tomathouse.com
Ingredients:
- 10 tablespoons of butter
- 2/3 cup dark sugar
- 1/3 cup sugar
- 1 egg
- 0.5 tsp vanilla extract
- 1 and 3/4 cups rolled oats
- 3/4 cup premium flour
- 1/4 cup whole wheat flour
- 1 teaspoon cinnamon
- 0.5 tsp baking soda
- 0.5 tsp salt
- 0.5 cups chocolate chips, raisins, chopped walnuts, coconut, or other fillings, depending on preference
Preparation:
- Preheat oven to 190°C and line a baking sheet with parchment paper.
- Melt the butter in a saucepan over medium heat and cook until bubbling subsides and the butter turns brown, about 5 minutes. Strain the butter through a coffee filter and cool to room temperature.
- Beat the brown butter, dark and regular sugars, egg, and vanilla together until smooth. In a separate bowl, whisk together the oats, flour, cinnamon, baking soda, and salt until smooth.
- Combine the contents of both bowls. Stir in your chosen filling (chocolate chips, raisins, walnuts, and/or coconut).
- Using a spoon, drop the cookies onto the prepared baking sheet and bake in the center of the oven for about 12 minutes, until golden brown. Let cool for 5 minutes, then carefully transfer them from the baking sheet to a wire rack to cool completely.
