Apple and walnut pie

Ingredients:

  • 1/4 cup orange liqueur (recommended: Grand Marnier)
  • 1/4 cup dried cranberries
  • 1 teaspoon ground cinnamon
  • Zest of half an orange
  • 1 cup premium flour
  • 1.5 tsp baking powder
  • 1/4 teaspoon salt
  • 4 eggs
  • 115 g butter, melted
  • 1/3 cup sugar
  • 1 tsp vanilla extract
  • 2 cups peeled and diced apples (about 2 apples)
  • 0.5 cups chopped toasted walnuts
  • Ice cream for serving

Preparation:

  1. Preheat oven to 175°C.
  2. Heat the orange liqueur in a small saucepan. Turn off the heat and add the cranberries, making sure they are completely submerged.
  3. In a small bowl, combine the cinnamon and orange zest. Stir in the flour, baking powder, and salt. In a large bowl, combine the eggs, butter, sugar, and vanilla. Add the dry ingredients and mix well.
  4. Add the apples, walnuts, and cranberries from the liqueur. Transfer the mixture to a lightly greased 8 x 8 x 2-inch (20 x 20 x 5 cm) glass baking dish or an 8-inch (20 cm) pie pan. Bake until a wooden skewer inserted into the center of the cake comes out clean, about 30 minutes.
  5. Cut the warm pie into squares or wedges and serve warm with ice cream.
