Baked Potato Wedges with Oregano

Preparation:

Slice 4 peeled potatoes into 4-cm-thick rounds. Combine them in an ovenproof skillet with 1/3 cup lemon juice, 1/4 cup olive oil, 4 crushed garlic cloves, 4 sprigs oregano, and season with salt and pepper. Add water to half-cover the potatoes. Cover, bring to a boil, and simmer for 5 minutes. Then remove the lid and bake the potatoes in the oven at 260°C for 30 minutes.
