Lentil salad with watercress

Preparation:

Cook 1 cup dried green lentils according to package directions, adding 2 cloves of garlic. Drain and discard the garlic. Combine the lentils with 1 bunch chopped watercress, 2 chopped green onions, and 2 tablespoons red wine vinegar; season with salt and pepper. Add 1 tablespoon olive oil and toss to combine.
