Ingredients:
Waffles
- 2 cups premium flour
- 0.5 cups oatmeal
- 2 tablespoons of sugar
- 1.5 tsp baking powder
- 0.5 tsp of soda
- 0.5 tsp ground ginger
- A pinch of salt
- 1 and 1/4 cups milk
- 1 tbsp. 2% granular cottage cheese
- 2 large eggs
- 0.5 tsp vanilla extract
- Zest of 0.5 orange, grated
- 20 g butter, melt and cool slightly
Cottage cheese topping
- 1 tbsp. 2% granular cottage cheese
- 2 tablespoons of sugar
- 1 tbsp. milk
- 0.5 tsp vanilla extract
Compote
- 20 g butter
- 3 Bere Bosc pears, peeled and cut into small pieces
- 1/3 cup dried cherries
- Juice of 2 oranges (about 1 cup)
- 2 tablespoons of sugar
Preparation:
- Preparing the curd toppingIn a food processor, combine the cottage cheese, sugar, milk, and vanilla extract and process until smooth. Cover and refrigerate until ready to serve.
- Making compoteMelt the butter in a saucepan over medium heat. Add the pears and cook for about 2 minutes, until browned around the edges. Add the dried cherries, orange juice, sugar, and 1/3 cup water. Bring to a simmer and cook until syrupy, about 5 minutes; set aside.
- Making wafflesPreheat oven to 120°C. In a large bowl, whisk together the flour, oats, sugar, baking powder, baking soda, ginger, and salt. In another bowl, whisk together the milk, cottage cheese, eggs, vanilla extract, and orange zest (the mixture will be lumpy), then whisk in the flour mixture until combined. Stir in the melted butter.
- Preheat the waffle iron and spray the cooking surface with cooking spray. Pour in a small amount of batter (about 0.5 cups, depending on your waffle iron) and cook until crisp. Transfer the waffles to a baking sheet and heat in the oven; repeat with the remaining batter. Top the waffles with the creamy topping and fruit compote.
