White Bean and Smoked Bacon Dip topcook.tomathouse.com
Ingredients:
- 1 cup applewood-smoked bacon, thinly sliced
- 1 can (400g) of canned white beans, drain and wash beans
- 1 tbsp red wine vinegar
- 1 tsp chopped shallots
- 2 pinches of nutmeg
- 3 anchovies
- Juice and grated zest of 1 lemon
- 1 clove of garlic
- 2/3 cup olive oil
- 0.5 cup fresh parsley, chopped
Preparation:
- In a small skillet over medium-low heat, fry the bacon, stirring regularly to prevent burning. Drain on paper towels, reserving the fat in the skillet.
- Place the bacon, white beans, vinegar, shallots, nutmeg, anchovies, lemon zest, juice, and garlic in a food processor and process until smooth. Season with salt and pepper. With the processor running, drizzle with olive oil and 1 tablespoon of the rendered bacon fat.
- Transfer the pasta to a serving bowl and stir in the parsley.
