Mashed potatoes with garlic and celery root

Ingredients:

  • 4 large potatoes (about 1 kg), peeled and cut into 5 cm pieces.
  • 1 celery root (about 200 g), peeled and cut into 5 cm pieces.
  • 4 cloves garlic, peeled
  • 3/4 cup low-fat sour milk or kefir
  • 2 teaspoons olive oil
  • 2 tbsp chopped chives

Preparation:

  1. In a large saucepan, combine the potatoes, celery root, and garlic. Add enough water to cover the vegetables and set the pan over high heat. Bring to a boil, reduce heat to medium, and simmer for 10 minutes, until the potatoes are tender.
  2. Drain the water and transfer the potatoes, celery, and garlic to a large bowl. Add the buttermilk and olive oil and mash until smooth (or lumpy, if you prefer!). Stir in the onion and season with pepper to taste.
