Mashed potatoes with blue cheese

Ingredients:

  • 1 kg red new potatoes, cut into 4 pieces
  • 2 cloves garlic, crushed
  • 5-6 strips of bacon
  • 110 g of gorgonzola at room temperature
  • 1/4 cup heavy cream, room temperature
  • 1 tbsp (15 g) butter at room temperature

Preparation:

  1. Place the potatoes and garlic in a medium saucepan and cover with cold water to a level of 2 cm (0.8 in). Season with salt and bring the water to a boil. Reduce the heat and simmer until the potatoes are tender, about 15 minutes.
  2. Meanwhile, fry the bacon in a skillet until crisp. Transfer to a paper towel to drain excess fat. Chop coarsely and set aside.
  3. Drain the potatoes and add them to the pan with the cheese, heavy cream, butter, and chopped bacon. Mash them roughly with a potato masher, adding more cream if needed. Season with salt and pepper to taste.
