Green beans with pine nuts

Ingredients:

  • 1 head of red onion, cut into half rings
  • 2 tbsp. l. olive oil
  • 500 g of green beans
  • Salt and freshly ground pepper
  • 3 tablespoons toasted pine nuts

Preparation:

  1. Sauté the onion in a covered skillet with 1 tablespoon olive oil for 5 minutes. Add another 1 tablespoon olive oil and the beans; cook for 5 minutes. Add 1/4 cup water, salt and pepper to taste, and continue cooking until the beans are tender, another 7 minutes. Stir in 3 tablespoons toasted pine nuts.
