Ingredients:
- Finely grated zest and juice of 2 limes
- 8 thin slices of ginger
- 2 cups unsweetened pineapple juice
- 1 cup apricot jam
- 1/4 cup Dijon mustard
Preparation:
- Combine lime juice, ginger, and pineapple juice in a saucepan. Bring to a simmer and cook until the liquid has reduced to 1/2 cup, 8-10 minutes. Strain, then stir in the lime zest, apricot preserves, and Dijon mustard.
- Pineapple-apricot glaze (pictured below) is perfect for glazing meats and vegetables.
