Cheese fondue with white wine topcook.tomathouse.com
Ingredients:
- 220 g of grated imported Swiss cheese
- 220 g grated Gruyere
- 2 tablespoons cornstarch
- 1 clove garlic, peeled
- 1 cup dry white wine
- 1 tbsp lemon juice
- 1 tbsp cherry brandy, such as kirsch
- 0.5 tsp mustard powder
- A pinch of nutmeg
- Vegetables or bread for dipping
Preparation:
- In a small bowl, combine the cheeses with cornstarch. Rub the inside of a ceramic fondue bowl with garlic; discard any remaining garlic.
- Bring the wine and lemon juice to a gentle simmer over medium heat. Gradually stir in the cheese. Melting the cheese gradually will result in a smoother fondue. Once the mixture is smooth, stir in the cherry brandy, mustard, and nutmeg.
- Place small pieces of vegetables and French bread on a turntable for dipping. You can also add sliced Granny Smith apples and blanched vegetables like cauliflower, carrots, and asparagus. Spear them with fondue forks or wooden skewers, dip, and enjoy!
