Avocado bread

Ingredients:

  • 2 cups of flour
  • 1.5 tsp baking powder
  • 0.5 tsp of soda
  • 0.5 tsp coarse salt
  • 1 large ripe avocado
  • 1 teaspoon lemon juice
  • 3/4 cup sugar
  • 0.5 cups low-fat cream
  • 0.5 tsp vanilla extract
  • 1 large egg

Preparation:

  1. Preheat oven to 375°F (190°C). Spray a 9 x 5-inch loaf pan with cooking spray.
  2. In a bowl, whisk together flour, baking powder, baking soda and salt.
  3. In a large bowl, thoroughly mash the avocado with lemon juice. Add the sugar, cream, vanilla, and egg and mix. Add the flour mixture and knead into a dough.
  4. Pour the batter into the prepared pan and bake until golden brown on top and a toothpick inserted into the center comes out clean, 45-55 minutes. Cool in the pan for 10 minutes, then transfer to a wire rack and cool completely.
