Broccoli with rice and caramelized bacon topcook.tomathouse.com
Ingredients:
- 100 g bacon, thinly sliced into thin strips
- 1 peeled 5 cm ginger root, chopped
- 1 tbsp. vegetable oil
- 3/4 teaspoon sugar
- 2 tsp plus 1/4 tsp soy sauce
- 3 cloves garlic, thinly sliced
- 1/4 - 1/2 tsp red pepper flakes
- 1/2 head of broccoli, finely chopped
- 5 cups boiled polished long-grain rice
- 1/4 cup lightly salted chicken broth
- 4 large eggs
- 1 bunch watercress, cut off the stems
- Mustard or hot chili sauce, for serving (optional)
Preparation:
- Caramelize bacon: Heat a deep frying pan over high heat, add a tablespoon of vegetable oil, add the bacon, and fry until golden brown and crispy, about 2 minutes. Sprinkle with sugar, add 1/4 teaspoon of soy sauce, stir until foamy, then cook for another 30 seconds.
Remove the bacon with a slotted spoon to drain off any excess fat.
- Fry the vegetables: Add garlic and red pepper flakes and cook until flavorful, about 30 seconds.
Add broccoli and cook until crisp, 2 to 3 minutes.
Add rice, remaining 2 teaspoons soy sauce, chicken broth, and caramelized bacon; stir. Use a spatula to push the rice aside.
- In the same frying pan, crack the eggs into the empty space and lightly bake for about 1 minute. Mix the rice with the eggs and stir in the watercress.
Divide among servings, top with mustard or hot sauce.
