Ingredients:
- 450 g ready-made pizza dough (see the pizza dough recipe here)
- Wheat flour, for dusting
- Olive oil, for greasing
- 3/4 cup refried beans
- 1/2 cup prepared hot salsa
- 1.5 cups grated mature cheddar cheese
- 3 green onions, cut into rings
- 1/4 cup sliced pickled jalapeño peppers
- 1/4 cup sour cream
- Juice of 1 lime
- Thinly sliced romaine lettuce, for sprinkling
- Diced tomato, for topping
- Coarse salt
- 1/4 cup fresh cilantro leaves
Preparation:
- Place a pizza stone or inverted baking sheet in the bottom of the oven and preheat to 230°C.
- Roll the dough out on a lightly floured work surface into a 28cm circle. Place the dough on a sheet of parchment paper. Brush the dough with olive oil, then spread the beans over it, leaving a 12mm border. Top with salsa and sprinkle with cheese. Sprinkle with green onions and jalapeños.
- Transfer the pizza, parchment-lined, to the preheated baking stone and bake until crispy, 8 to 10 minutes. Cool the pizza for a few minutes.
- While the pizza is cooking, combine the sour cream, half the lime juice, and 1 tablespoon of water in a bowl. In another bowl, combine the lettuce, tomato, and lime juice to taste; season with salt.
- Place on top pizza salad, then drizzle with sour cream sauce and sprinkle with cilantro. Cut into slices.
