BBQ Pulled Chicken Sandwiches

Ingredients:

  • 1 whole grilled chicken, remove the skin, chop the meat into thin pieces (about 4 - 4.5 cups)
  • 1 tbsp. l. rapeseed oil (canola)
  • 1 large onion, chopped
  • 3 cloves garlic, crushed
  • 1 can (400 g) of lightly salted tomato sauce
  • 1/4 cup tomato paste
  • 0.5 cups of water
  • 1/3 cup apple cider vinegar
  • 5 tablespoons molasses
  • 1/4 tsp ground black pepper
  • 0.5 tsp liquid smoke
  • 6 whole grain hamburger buns
  • 6 large lettuce leaves

Preparation:

  1. Heat oil in a large skillet over medium heat. Add the onion and cook until softened and translucent, about 5 minutes. Add the garlic and cook for another minute. Add the tomato sauce, tomato paste, water, vinegar, molasses, pepper, and liquid smoke and bring to a boil. Reduce the heat to medium-low and simmer for 15 minutes. Add the shredded chicken, return to a simmer, and simmer for another 10 minutes.
  2. Cut the buns in half horizontally. Place a lettuce leaf on each bottom half of the bun, and top with 3/4 cup of the chicken mixture.
