Stir-fried Cauliflower with Tofu and Roasted Peppers

Ingredients:

  • Half a large head or 1 small head of cauliflower, cut into florets
  • 4 tbsp. l. olive oil
  • 3 cloves garlic, chopped
  • 1 roasted sweet pepper, seeded and chopped
  • 2 tablespoons soft tofu
  • 0.5 tsp crushed red pepper flakes
  • 2 tbsp. breadcrumbs
  • 1 tbsp. sesame seeds

Preparation:

  1. Heat 3 tablespoons of olive oil in a large skillet over medium heat. Add the cauliflower and season with salt and pepper. Cook, stirring every few minutes, until the cauliflower begins to brown and soften, about 12 minutes.
  2. While the cauliflower is roasting, heat the remaining 1 tablespoon of olive oil in a medium skillet over medium-low heat. Add the garlic and cook until softened, 1 minute. Add the roasted bell pepper and cook for a few more minutes, until heated through. Transfer to a blender or mini food processor and puree. Add the tofu, a pinch of salt, and black pepper, and puree until smooth.
  3. Add the puree and red pepper flakes to the cauliflower and cook for 1 minute. Add the breadcrumbs and sesame seeds and cook for another minute. Transfer the cauliflower to a serving platter and serve.
