Ingredients:
- 1 cup frozen green peas, thawed
- 1/4 cup toasted walnuts
- 1 clove of garlic
- 1/4 cup grated domestic Parmesan
- Juice of 1 lemon
- 1/4 cup olive oil
- To serve: crostini
Preparation:
- Combine green peas, walnuts, and garlic in a food processor. Blend until a thick paste forms. Add the cheese and lemon juice and blend again until smooth.
- With the processor running, slowly pour in the olive oil until a thick paste forms. Turn off the food processor. Season the pea paste with salt and pepper to taste. Whisk the pesto one last time to incorporate the salt.
- Spread on crostini and serve as an appetizer.
