Herb-Stuffed Zucchini

Preparation:

Cut 2 medium zucchinis in half lengthwise, scoop out the seeds and season with salt.

Mix 1/3 cup. breadcrumbs, 1 finely chopped tomato, 1/4 cup chopped parsley and dill mixture, 2 tbsp chopped walnuts, 1 minced garlic clove, 2 tbsp olive oil, salt and pepper to taste.

Place the resulting mixture into the zucchini, drizzle with olive oil, and bake at 220 degrees Celsius for 25-30 minutes.
