Ingredients:
- 1 loaf of French or Italian bread
- 2 packages of 220g cream cheese, room temperature
- 280 g sharp cheddar, grated (about 2 1/2 cups)
- 170 gr. corned beef, finely chopped
- 1 large bunch green onions, finely chopped
- 1 medium tomato, finely chopped
- Half a red bell pepper, stemmed and seeded, finely chopped
- 0.5 tsp hot sauce, such as Tabasco
- 0.5 tsp chili powder
- Large corn chips, for serving
Preparation:
- Preheat oven to 175°C.
- Cut an oval out of the top of the loaf of bread. Scoop out the crumb from the center to form a "bread boat." Place the bread on a baking sheet.
- In a large bowl, combine the cream cheese, cheddar, corned beef, green onions, tomatoes, bell peppers, hot sauce, and chili powder until evenly distributed. Spoon the mixture into the bread boat. Bake for 30 minutes, until the filling is bubbling, and serve hot with tortilla chips.
