Mini Buffalo Turkey Meatloaf topcook.tomathouse.com
Ingredients:
- A quarter of an onion, coarsely chopped
- 3 carrots (1 coarsely chopped, 2 grated)
- 2 cloves of garlic
- 700 g lean ground turkey
- 1 large egg
- 0.5 cup panko breadcrumbs
- 1/4 cup whole milk
- 1/3 cup + 2 tablespoons Buffalo hot sauce
- 2 tablespoons unsalted butter, melted
- 2 cups finely chopped broccoli florets
- 4 stalks celery, thinly sliced
- 0.5 cup blue cheese dressing
Preparation:
- Preheat oven to 230°C.
- Combine the onion, chopped carrot, and garlic in a food processor and chop finely; transfer to a large bowl. Add the ground turkey, egg, panko breadcrumbs, milk, 2 tablespoons hot sauce, 1/4 teaspoon salt, and a pinch of freshly ground black pepper. Mix thoroughly with your hands. On a rimmed baking sheet, form four oval patties, 2 cm thick.
- Bake the patties until they are firm and a thermometer inserted into the center reads 165°F (74°C), 20 to 25 minutes.
- In a bowl, combine melted butter with the remaining 1/3 cup hot sauce. Brush the tops of the meatloaf with half the sauce, then return to the oven and bake until the sauce is set, about 4 minutes. Remove from the oven and brush with the remaining sauce.
- Transfer the meatloaf to plates. Toss the broccoli, shredded carrots, and celery with the blue cheese dressing and serve with the meatloaf.
