Peanut Butter Cookies with Jam topcook.tomathouse.com
Ingredients:
- 1 egg
- 3/4 cup sugar
- 1 tbsp. peanut butter
- 1 tsp vanilla extract
- 4 tsp grape jam
Preparation:
- Preheat oven to 175°C.
- In a medium bowl, beat the egg and sugar until smooth. Add the peanut butter and vanilla extract and mix until smooth. By this point, the batter will have thickened.
- Drop the dough, 1 tablespoon at a time, onto a parchment-lined baking sheet. Spray a small offset spatula with cooking spray and press the balls into a 1/2-inch thick layer; make a well in the center. Add 1/4 teaspoon of grape jam to each well and spread it into a thin layer.
- Bake until golden brown, 15–18 minutes. Let the cookies cool.
