Cucumber and papaya salad

Ingredients:

  • 1 large cucumber, peeled, seeded and diced (about 1 1/2 cups)
  • 1 large papaya, peeled and cut into 1 cm cubes
  • 6 lettuce leaves
  • 1/2 tsp salt
  • 4 teaspoons of sugar
  • 1/4 tbsp. rice wine vinegar
  • 1 tbsp. l. peanut butter
  • 1 tsp chili pepper paste
  • 2 tsp chopped fresh ginger
  • 1/2 cup chopped onion (optional)
  • 1/4 cup chopped fresh cilantro

Preparation:

  1. Sprinkle the cucumber with salt, place it in a colander, and let it drain for 20 minutes. Wash and dry.

    In a bowl, combine the wine vinegar, sugar, peanut butter, chili paste, and ginger. Add the cucumber, papaya, and cilantro and toss to combine. Arrange on a serving platter or, on 4 serving plates, arrange the lettuce leaves and top each with about 1/2 cup of lettuce.

    Serve.
