Fried shrimp with garlic sauce topcook.tomathouse.com
Ingredients:
- 3 shallots, peeled and chopped
- 7 cloves garlic, peeled and chopped
- 3/4 cup olive oil
- 900 g large sea shrimp, shells and heads removed, dark veins removed
- 4 sprigs of fresh thyme
- 2.5 tsp sea salt
- 2 cups dry white wine
- 2 tablespoons freshly squeezed lemon juice
- 6 tbsp (90 g) butter
- 1/2 cup chopped fresh Italian parsley
- 1 tbsp. breadcrumbs
Preparation:
- In a food processor, combine the shallot, 5 cloves of garlic, and 2 tablespoons of olive oil. Puree until smooth.
- Heat 6 tablespoons of olive oil in a skillet over medium-high heat. Add the remaining garlic and cook, stirring, for 1 minute. Then add half of the shrimp, thyme sprigs, 1/2 teaspoon salt and cook until the shrimp are golden brown, 1 to 2 minutes. Transfer the shrimp to a platter and repeat with the remaining shrimp, adding another 1/2 teaspoon salt. Transfer the remaining shrimp and thyme to a platter.
- Add 4 tablespoons olive oil, chopped shallots, and garlic to the same skillet and cook, stirring, until the paste is browned, 2 to 3 minutes. Return the thyme to the skillet and pour in the white wine and lemon juice. Add 1 1/2 teaspoons salt, 4 tablespoons (60 g) butter, and 1 cup water. Bring the sauce to a simmer and cook until the liquid is reduced by half, 4 to 5 minutes.
- Once the sauce has reduced, stir in the remaining butter and shrimp. Continue cooking, stirring, until the shrimp are cooked through, 2-3 minutes. Stir in the parsley and breadcrumbs.
