Bacon and Green Onion Scones

Ingredients:

  • 2 strips of bacon
  • 1 small onion, chopped
  • 3 cups all-purpose flour, plus more for rolling out the dough
  • 1/3 cup dry milk
  • 5 tsp baking powder
  • 1 tbsp. sugar
  • 2 tsp tartar sauce
  • 2 teaspoons of salt
  • 1/2 cup chilled margarine
  • 1.5 cups buttermilk
  • 110 g (4 oz) cold butter, cut into pieces, plus 4 tbsp (2 oz) melted butter

Preparation:

  1. Preheat oven to 230 degrees.

    In a small skillet, fry the bacon over medium heat until crisp, 5 to 7 minutes. Drain on paper towels to cool, then chop into small pieces. Add the onion to the skillet with the bacon fat and fry over medium heat until lightly golden, about 5 minutes. Use paper towels.
  2. Combine flour, dry milk, baking powder, sugar, cream of tartar, and salt in a medium bowl. Cut chilled butter into pieces and stir into the dry mixture until fully combined. Stir in the fried bacon and onion. Add the buttermilk and stir until the batter is smooth.
  3. Turn the dough out onto a lightly floured surface and roll it out into a circle 4-5 cm thick using your hands. Cut out circles using a cookie cutter or glass. Place the cookies in a baking pan, then brush the tops with melted butter. Bake until golden brown, about 15 minutes.
